Fraternitas returns to Converso: four MICHELIN stars around one table
Gastronomy offers another compelling reason to discover Castilla Termal Monasterio de Valbuena this autumn. On 23 October, Converso, located within the historic Monastery of Santa María de Valbuena in the heart of Ribera del Duero, will host a new edition of Fraternitas, its special series of four-hands dinners.
This edition brings together Miguel Ángel de la Cruz and Nacho Manzano, two chefs whose culinary identities are deeply connected to landscape, seasonality and local produce.
Miguel Ángel de la Cruz is the chef behind La Botica de Matapozuelos, awarded one MICHELIN Star and a MICHELIN Green Star. His naturalistic approach explores the surrounding landscape and transforms local and wild ingredients into a highly personal culinary language. His vision has also played a central role in shaping Converso’s menus.
Joining him will be Nacho Manzano, chef of Casa Marcial in Asturias, a restaurant awarded three MICHELIN Starsand renowned for its contemporary interpretation of Asturian roots, local producers and the surrounding landscape.
Together, the evening brings what Converso describes as four MICHELIN stars into one kitchen.
Two chefs, two landscapes, one evening Fraternitas is conceived as more than a conventional guest-chef dinner. It is a dialogue between two culinary territories and two individual ways of interpreting nature, tradition and seasonality.
For this encounter, Miguel Ángel de la Cruz and Nacho Manzano will create a menu designed specifically for this single evening, making it an experience that cannot simply be repeated from Converso’s regular menu.
Converso: gastronomy within a historic monastery Converso is the gastronomic restaurant of Castilla Termal Monasterio de Valbuena, located in the historic Monastery of Santa María de Valbuena in Ribera del Duero. Its cuisine combines tradition and creativity, with a strong focus on regional produce, seasonality and ingredients from the hotel’s own organic garden. Its current gastronomic offering includes the Essentia and Centum tasting experiences.
Even its name reflects the history of the monastery. The conversos were non-religious workers who assisted the Cistercian monks with agricultural work in exchange for food and shelter — another link between the restaurant, the land and the heritage of the property.
